Elevated Eats: Fall Galette

Calling all my Moon Foodies! Who else is excited for fall, and especially the flavors that accompany this gorgeous season?!?! While fresh summer produce is delicious - there is nothing more cozy than the season change from summer to fall. Get out the throws, mugs, sweaters, and everything, apple and pumpkin. Since the season has just begun we are going to lean into early fall produce availability with these recipes. A potato and butternut squash galette is easy to prepare yet presents as a dynamite dish. This galette relies on flavor from fresh herbs and goat cheese and is finished with a spicy Moon Honey drizzle.


Butternut Squash and Potato Galette

Ingredients:


A fall recipe with apples and herbs and flakey bread, infused with cannabis honey
Cannabis Infused Fall Galette
  • 1 store-bought pie crust

  • 1/2 cup thinly sliced potato ( I used red)

  • 1/2 cup thinly sliced butternut squash

  • 2 tablespoons something crunchy (pistachios, almonds, pumpkin seeds)

  • 2 tablespoons olive oil (more for drizzling)

  • 1 teaspoon fresh rosemary, chopped

  • 1 teaspoon fresh thyme, chopped

  • 1/2 teaspoon salt

  • Black pepper

  • 1/4 cup chive and onion cream cheese, softened

  • 4 ounces goat cheese, softened

  • For finishing: Moon honey, red pepper flakes

Moon THC Honey Galette

Instructions:


  1. In a bowl combine cream cheese and goat cheese. Set aside.

  2. Toss to coat potato slices, butternut squash slices, crunchy choice, olive oil, rosemary, thyme, salt, and black pepper to taste.

  3. Roll out pie crust slightly thinner than it comes.

  4. Spread the cheese mixture on the pie crust, leaving 1 inch bare on the edges.

  5. Place the potatoes and squash in a single layer over the cheese- overlapping minimally.

  6. Fold the edges of the crust in. Drizzle with olive oil and sprinkle the galette with flaky salt. Bake 375 degrees until the crust is golden and crispy.

  7. In a bowl, combine Moon Honey with red pepper flakes, depending on taste preference - drizzle this mixture over the warm galette.



Every good meal needs a cutie little drink, I think you will find my Apple Ginger Fizz mocktail the perfect accompaniment. Sweet and spicy, dosed with your preference of Moon Shot, this one is the best start to one of the tastiest seasons, Fall!!


Apple Ginger Fizz

(Recipe for 1 drink)


Ingredients:

a fall mocktail that is infused with Moon Shots
Infused Apple Ginger Fizz

3 ounces apple cider

2 ounces ginger beer

1 teaspoon apple cider vinegar 

1 Moon Shot

2 sprigs of rosemary

Sparkling water (I use Topo Chico)

Apple slices, honey,and coarse sugar for garnish 


Instructions:

Dip the side of a glass in honey and then roll in coarse sugar.

Add cider, ginger beer, Moon Shot, 1 sprig of rosemary, and vinegar to a shaker filled with ice and shake until very chilled. 

Add ice to the garnished glass and pour in cider mixture. Top with sparkling water. Garnish with rosemary sprig and apple slices.
