Elevated Eats: Moon Paloma Mocktail + Canna-infused Granola

Happy 2025 Moon Foodies! I hope the new year has been off to a good start for everyone. Typically, January is for resetting and getting back to a normal swing of life. A time to reflect on habits and health and possibly implement a change here or there. Maybe the holiday parties took a toll, and you decided to give Dry January a go - or maybe you are trying to purchase less prepackaged groceries?! I have two recipes to share that just might help. Cannabis is a glorious alternative to alcohol. With different cannabinoids and doses to choose from, there is an option for every occasion and desired feel. The new Moon Mixers are unflavored and may be added to any drink - what a world of mixology wonders this opens.
Winter is the season the most delicious citrus fruit is available, so…the star for the mocktail is fresh grapefruit juice. Topped with lemon lime soda and a sugary citrus rim. This one is light and refreshing while still having a special feel.
Moon Paloma

Ingredients:
3 ounces fresh squeezed grapefruit juice
1 ounce lime juice
1 Moon Mixer
Lemon lime soda
Ice
Fruit slices, coarse sugar and citrus zest for the rim
Directions:
Rub a slice of lemon/lime along one side of the glass.
Dip into the sugar zest mixture. Set aside.
In a cocktail shaker combine fruit juices and moon mixer with ice - shake until chilled.
Add ice to the glass, pour over the juice mixture, and top with lemon-lime soda.
Garnish with fruit slices.
Next, homemade granola, have you tried it? Granola is so easy to make at home, and so much healthier. You can control the sugar, no preservatives, and you have the ability to customize to your household's liking. Dried fruit, seeds, nuts, dark chocolate pieces. You will walk right by the store-bought varieties after you make this at home.

Moon Granola
Ingredients:
3 cups rolled oats
1 cup almond slices
1 cup chopped pecan (or any nut of choice)
3/4 cup unsweetened coconut flakes
1/4 cup brown sugar
1/4 cup Moon Honey
1/4 cup avocado oil
1 teaspoon kosher salt
Directions:
Preheat oven to 250 degrees.
In a large bowl, combine oats, nuts, coconut and brown sugar.
In a separate bowl, whisk honey, oil, and salt to combine.
Pour over dry ingredients and toss to coat.
Pour onto two parchment lined sheet pans - bake for 60 minutes, stirring every 15 minutes. Remove pans and transfer to a large bowl.
Allow to fully cool before storing in an airtight container.
