Elevated Eats: Dragonfruit Moon Colada & Shrimp Tacos

May might be my favorite month in the West Virginia hills. The earth is coming back to life from its winter hibernation, colors are popping around every corner, and communities are thriving because we are out amongst our neighbors. For Buckhannon (our home town) May brings the largest community event of the year - the Strawberry Festival (this year marks 83 years).
Of course I have a strawberry recipe to share, Chili Lime Shrimp tacos with a Strawberry Salsa. A quick bright marinade of chili and lime prep the shrimp for the grill. Off the heat, they receive a drizzle of Moon Honey to balance the spice and acidity. Fresh strawberries, tossed with cherry tomatoes, jalapeño, red onion, lime, and cilantro, create a summer salsa you will keep coming back to. Throughout the season, experiment with and swap the peak fruits and herbs as they become available for variation.
Chili Lime Shrimp Tacos
(4 servings)

Ingredients for the shrimp:
1 lb peeled and deveined shrimp
2 tablespoons olive oil
2 tablespoons fresh lime juice
3/4 teaspoon kosher salt
1/2 teaspoon chili powder
Fresh cracked black pepper to taste
Moon Honey and Flaky Salt for finishing
Directions for the shrimp:
Marinate shrimp in all ingredients (not including honey) for 20 minutes.
Place on skewers then grill, they will only take a few minutes per side depending on the size of the shrimp.
Watch closely to avoid overcooking.
Drizzle with honey and sprinkle with Flaky Salt once removed from the heat.
Ingredients for the Strawberry Salsa:
1/2 cup strawberries, cut into small pieces
1 cup cherry tomatoes, quartered
2 tablespoons chopped red onion
2 tablespoons finely chopped jalapeños
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
Salt to taste
Tip: If your strawberries are lacking sweetness, add a little Moon Honey
Directions for the Strawberry Salsa: Combine all ingredients. Chill for 1 hour before serving.
If you are feeling a little spicy, make some creamy jalapeno sauce: In a food processor, combine 1/2-1 jalapeño (depending on spice preference), 1/4 cup Greek yogurt, 1/4 cup avocado oil, salt to taste, and process until smooth.
Last, serve taco ingredients on warm corn tortillas (I char mine on the grill). Garnish with cilantro leaves.
Shrimp tacos and sitting outside by the grill!?- this certainly calls for a frozen drink!!
Dragonfruit Moon Colada is just what you are searching for. Frozen dragonfruit and pineapple blended together is a dream. For the colada part- coconut water (extra hydration and deliciousness) and cream of coconut to add sweetness. Pour in a Moon Mixer of choice and relax. Why are blended drinks just more fun??

Dragonfruit Moon Colada
(For 2 drinks)
Ingredients:
1 cup frozen pineapple pieces
1/2 cup frozen dragonfruit
1/3 cup ice*
1 tablespoon lemon juice
1/2 -3/4 cup coconut water*
2 tablespoons cream of coconut (more if you like it sweeter)
Moon Mixers of choice**
Directions:
Combine all ingredients in a blender until smooth.
*Consistency may vary depending on frozen fruit and blender power, adjust the coconut water and ice to achieve desired consistency.

Grab some strawberries, some friends, and prep this pairing together. The Strawberry Festival is a reminder of what can be accomplished if communities support each other and work together.
